What is your spirit vegetable?

Note: This question this week was provided by one of our editors on this series. Please read their response below.

This editor feels like a green pepper. A mild yet consequential accoutrement of your favorite meal. Not necessarily standing out but very much there.

Imagine your Chipotle trips without the peppers? Fajita veggies to add some crunch and green to the meal. That's what the editor of this series feels like they provide. Crunchy greens that do not overpower the taste buds but rather compliment the rest of the smorgasbord.

The modest green pepper grows in the garden. It's an easy addition to any healthy meal and the prep time is minimal. And, the green pepper offers a staggering amount of variety. Stuffed peppers? Absolutely delicious, and another chance to showcase a personal cheflike flair depending on the recipe. Italian sausage? The peppers are your veggie of choice, pairing well with saucy dishes. Or just chop em' up and roast them for a perfect finishing touch on sandwiches, salads, pizzas and more. The pepper is a key ingredient in a combination pizza, and without it we couldn't turn around and claim pizza nights as "healthy".

It also helps that green is one of my favorite colors.

Honorable mentions go out to the flashy carrot, and the criminally underrated brussels sprouts.
